强烈的阳光照射,使得这里是一个炎热的季节。7月底至8月初这段时间被称为“大暑期”,即24个太阳月期间。如今,打开空调可以轻松降温,但自古以来,日本人采用各种方法来抵御炎热,比如在屋檐上挂风铃享受凉爽的声音,在窗户挂窗帘挡住烈日,以及在花园和入口处倒水。这些习俗不仅反映了忍受潮湿夏季的理性,也体现了日本人与自然和谐共处、即使在炎热中也能获得凉爽的丰富感受。此外,在饮食文化中还能找到各种健康习惯,如冷藏甘酒和土豆鳗。

大暑ときゅうり

強い日差しが照り付け、厳しい暑さが続く季節になりました。7月下旬から8月上旬ごろを二十四節では「大暑」と呼びます。現代ではクーラーのスイッチを入れれば簡単に涼を得ることができますが、日本人は昔から、軒先に風鈴を下げて涼しげな音を楽しんだり、窓に簾を下げて暑い日差しを遮り、庭や玄関に打ち水をして、様々な方法で暑さをしのいできました。このような習慣には、蒸し暑い夏を乗り切る合理性だけでなく、暑さの中にも涼を見つけて楽しむ、自然と共に生きてきた日本人の豊かな感性が見られます。さらに、食文化においても、冷やした甘酒や土用のウナギなど、様々な養生の工夫が見られます。

今回は、この季節に定番の食材、きゅうりについてお話します。きゅうりは朝鮮半島から「黄瓜」の名で日本に伝来し、天平時代の文献にすでにその名前を見ることができます。成分のほとんどが水分で、あまり栄養はなさそう…というのがきゅうりのイメージですが、この豊富な水分こそが夏にぴったりの薬効なのです。中国の薬物書『本草綱目』に「熱を冷まし、渇きを止め、水を利する」とあるように、身体の過剰な熱を取り除き、暑気あたりの食欲不振を癒す働きがあります。水分に渇きを止めて体を潤す作用があると同時に、カリウムを多く含み、余分な水分を排出する作用にも優れているため、湿気が多く体内に水分が滞りやすい日本の夏にふさわしい食材です。そのままで味噌や塩をつけて食べたり、漬物や酢の物が定番ですが、たたいて塩もみしたきゅうりを長いもと梅肉で和えた「きゅうりと長いもの梅肉和え」は、暑い日のさっぱりした副菜にぴったりです。また、牛肉と炒めてオイスターソースや豆板醤で味付けした「きゅうりと牛肉のピリ辛炒め」は、こってりしたものを食べてスタミナを補給したいときにふさわしい一品です。ろいろな食べ方で試してみてください!

Great Heat and Cucumbers

The season of intense sunlight and severe heat has arrived. From late July to early August, this period is called 'Great Heat' in the traditional 24 solar terms. Nowadays, we can easily cool down with air conditioning, but traditionally, Japanese people have enjoyed the cool sound of wind chimes hung under eaves, used blinds on windows to block the hot sun, and sprinkled water in gardens or at entrances, enduring the heat through various means. These practices not only have practical value for surviving the humid summer but also reflect the rich sensibility of the Japanese, who have lived in harmony with nature and found pleasure in coolness amid heat. Additionally, food culture includes various health-preserving practices, such as chilled sweet sake and grilled eel during the midsummer period.

This time, we will talk about cucumbers, a classic seasonal ingredient. Cucumbers were brought to Japan from the Korean Peninsula under the name 'huanggua,' and their name appears in documents from the Tenpyō period. They are mostly water and might seem nutritionally insignificant, but this abundant water content makes them perfect for summer. As described in the Chinese medicinal book 'Compendium of Materia Medica,' cucumbers 'cool heat, quench thirst, and promote urination,' helping to remove excess heat in the body and relieve summer-induced loss of appetite. With their thirst-quenching and body-moisturizing effects, along with high potassium content that helps eliminate excess fluids, cucumbers are ideal for Japan’s humid summer where the body tends to retain water. Common ways to eat them include raw with miso or salt, pickled, or in vinegar dishes. A refreshing side dish for hot days is 'Cucumber and Nagaimo with Plum Paste,' made by lightly pounding cucumbers, rubbing with salt, and mixing with nagaimo and plum paste. Another dish, 'Spicy Stir-Fried Cucumber and Beef,' seasoned with oyster sauce or doubanjiang, is perfect for replenishing stamina with hearty food. Please try cucumbers in various ways!
