白露与稻米

早晚的空气逐渐清凉宜人,草木上的露水在阳光下闪烁着白光,季节已经来到了白露。古人将此露称为“白露”。吟咏此季节的百人一首诗句“白露吹拂秋之野,散满未能集之珠”(文屋朝康)您可能也有所耳闻。这是秋景中带有淡淡哀愁、富有韵致的季节到来。

另一方面,田地与乡间迎来了收获季节,秋季美食令人心情愉快。很快,新米就会在店铺铺开。新米蒸煮出的香气轻轻升腾,是秋季特有的绝佳美味。这次介绍自古以来日本人的主食——米。

米是禾本科一年生植物的种子,其淀粉约占75%。米不仅含有作为能量来源的淀粉,还富含蛋白质、脂肪、维生素B1和维生素E等营养素,是营养宝库。其中占成分七成以上的淀粉质量极佳,消化吸收率高,被认为可以储存并持续提供能量。此外,胚芽中富含B族维生素、维生素E/K和矿物质,米糠中也含有优质蛋白质、脂肪、维生素、矿物质及膳食纤维。在日常饮食中多食用精米,然而糙米中包含丰富的各种营养素,中医还将其称为“粳米”,用于调理胃肠、补充气力。糙米烹调较为繁琐,硬度较高可能让部分人不适应,但近年来有将糙米全粒微粉化的产品,可以用于多种料理,有助于健康,也不妨尝试。

此外,为了健康及防治疾病,很多人注重低盐饮食。面包、乌冬、拉面等含盐量较高,而米只需用水即可烹煮,不含盐分。此外,米为颗粒状,食用时需要细嚼,有助于唾液分泌,从而减轻胃肠负担,提高营养吸收。因此,从健康角度来看,米是理想的主食。当前有人指出日本人逐渐远离米食,不妨在新米丰收的美味季节,再次重新认识营养丰富的米的优点。

白露と米

朝夕の空気がひんやりと心地よく、草木に降りた露が白く光る季節になりました。 昔の人は、この露を「白露」と名付けました。この季節を詠んだ百人一首の「白露に 風の吹きしく秋の野は つらぬきとめぬ玉ぞ散りける」(文屋朝康)は、 ご存知の方も多いのではないでしょうか。秋景色にどことなく物哀しさが漂う、 趣深い季節の訪れです。

その一方で、田畑や里山では収穫の季節を迎え、秋の味覚に心躍ります。そろそろ 早いものだと店頭に新米が並びますね。ふんわりと立ち昇る炊きたての新米の香り、 秋ならではの最高のご馳走です。今回は、古来からの日本人の主食、米についてお話します。

米はイネ科の一年草の種実で、でんぷんが約75%を占めています。お米には、エネルギーの 源となるでんぷんの他、タンパク質や脂肪、ビタミンB1やビタミンEなどの栄養素が豊富に ふんだんに含まれていて、まさに栄養の宝庫です。なかでも成分の7割以上を占める でんぷんは極めて質が良く、消化・吸収も高いので、エネルギーをたくわえ、持続すると 言われています。さらに、胚芽にはビタミンB群、ビタミンE/K、ミネラルが豊富に含まれており、 また、米ぬかには良質なたんぱく質や脂質、ビタミン、ミネラル、食物繊維類が豊富に 含まれています。日常の食卓では精白米を食べることが多いですが、玄米には様々な栄養が 豊富に含まれ、漢方では胃腸を整え、気力を補う「粳米」と呼ばれる生薬にもなっています。 玄米は調理に手間がかかり、硬さが気になる方もいらっしゃるかもしれませんが、最近では、 玄米の全粒を微粉末にした製品などもいろいろあるため、様々な料理に活用して、健康に 役立ててみるのもいいかもしれませんね。

また、健康や疾患の予防・治療のために減塩を心掛けていらっしゃる方も多いかと思います。 パンやうどん、ラーメンなどには塩分が含まれますが、米は水だけで炊いて調理ができるため、 塩分が含まれません。それだけでなく、お米は粒であるため、食べる際によく噛むので、 唾液の分泌が促されます。それによって胃腸への負担が軽減され、栄養の吸収を高めます。 このことからも、米は健康の面においても理想的な主食であると言えるでしょう。 日本人の米離れが進んでいると指摘される現在ですが、栄養にも優れたお米の良さを、 新米の美味しいこの季節に改めて見直してみませんか。

White Dew and Rice

The air in the mornings and evenings has become pleasantly cool, and the dew on the grass and trees glimmers white. People long ago named this dew "White Dew." You may be familiar with a poem from the Hyakunin Isshu about this season: "White dew blows across the autumn fields, scattering pearls that cannot be held" (Bun'ya Asayasu). Autumn brings a certain gentle melancholy, making it a season full of charm.

At the same time, fields and satoyama (village forests) are entering the harvest season, bringing excitement for autumn flavors. The early new rice starts appearing in stores around this time. The aroma of freshly cooked new rice steaming gently is one of the finest seasonal treats. This time, we talk about rice, the staple food of the Japanese people since ancient times.

Rice is the seed of an annual grass of the Poaceae family, with starch accounting for about 75% of it. In addition to being a source of energy, rice is rich in nutrients such as protein, fat, vitamin B1, and vitamin E, making it a true treasure trove of nutrition. Among these, the starch, which makes up more than 70% of its components, is of excellent quality and is highly digestible and absorbable, which makes it said to store and sustain energy. Furthermore, the germ contains abundant vitamin B complex, vitamins E and K, and minerals, while rice bran is rich in high-quality protein, fat, vitamins, minerals, and dietary fiber. While polished rice is often eaten in daily meals, brown rice contains various nutrients and is also used in traditional Chinese medicine as a raw drug called "Uruchima Rice," known to improve digestion and supplement vitality. Brown rice may be more labor-intensive to cook and might feel hard for some people, but recently, there are various products made from powdered whole-grain brown rice that can be used in various dishes, potentially benefiting health.

Additionally, many people work to reduce salt intake to prevent or treat health issues. Bread, udon, and ramen contain salt, but rice can be cooked with water alone and contains no salt. Moreover, because rice is consumed in grains and chewed thoroughly, it stimulates saliva secretion. This reduces the burden on the stomach and intestines and enhances nutrient absorption. From this perspective, rice can be considered an ideal staple for health. Although some point out that Japanese people are moving away from rice, why not rediscover the value of rice, particularly its nutritional excellence, in this season of delicious new rice?
