立春
立春紧随节分之后,是从冬季向春季过渡的时期。严寒也持续到立春前后。白天开始逐渐变长,寒意开始缓解,梅花飘香。象征这个季节的黄莺也被称为“报春鸟”,预示春天的到来。此次将介绍在这个季节日本料理中不可或缺的三叶。三叶为伞形科多年生植物,在日本自江户时代起就被作为蔬菜栽培。三叶主要用于享受其香味,不会大量食用,但其清爽的香气成分被认为能消除胃部不适、促进食欲,并具有镇静神经的作用。据说自古以来,有民间疗法在孩子夜啼时让其喝三叶榨汁,当感到烦躁或难以入睡时也推荐使用。为了享受其脆嫩的口感,建议生食于沙拉中,或做清炖或拌菜。三叶与樱虾或天妇罗搭配,也可以做出色彩鲜艳、充满春意的一道菜。

立春
節分の翌日に迎える立春は、冬から春に移る時期。厳しい寒さも立春まで。少しずつ日が伸びて寒さが和らぎはじめ、梅の花が香ります。この季節を象徴する鶯は、「春告鳥」とも呼ばれ、春の兆しを告げます。今回は、この季節の日本料理に欠かせない三つ葉についてご紹介します。三つ葉はセリ科の
多年草で、日本では江戸時代から野菜として栽培されるようになりました。三つ葉は香りを楽しむのが主で大量には食べませんが、さわやかな香り成分には胃もたれを解消して食欲を増進し、神経の興奮を静める作用があるとされます。昔から、子供の夜泣きに三つ葉のしぼり汁を飲ませる民間療法があると言われますが、イライラするときや寝付けない時にもお勧めです。持ち味であるシャキシャキした食感を楽しむためには、生のままでサラダにしたり、おひたしやあえ物がおすすめです。桜エビとかき揚げにしても、彩の鮮やかな春らしい一品になるでしょう。
春のはじまりとは言え、この時期はまだ寒い日も多く、冬の影響が残ります。フェイシャルマッサージをして目の周りの筋肉をリラックスさせたり、耳の周りや首、脇や足の付け根をこすったりもんだりして、リンパの流れをスムーズにすると、気分もリラックスします。春は物事の始まりの季節、心身ともにリラックスして新鮮な気持ちで新しいことに挑戦してみましょう。

Risshun (Beginning of Spring)
Risshun, which comes the day after Setsubun, marks the transition from winter to spring. The severe cold lasts until Risshun. The days gradually get longer, the cold begins to ease, and the plum blossoms start to scent the air. The bush warbler, a symbol of this season, is also called the "harbinger of spring," announcing the coming of spring. This time, we introduce mitsuba, an essential ingredient in Japanese cuisine for this season. Mitsuba is a perennial plant of the parsley family, cultivated as a vegetable in Japan since the Edo period. Mitsuba is mainly enjoyed for its aroma and not eaten in large quantities, but its refreshing aroma components are said to relieve indigestion, stimulate appetite, and calm nervous excitement. It is said that there has long been a folk remedy of giving children squeezed mitsuba juice for night crying, and it is also recommended when feeling irritable or having trouble sleeping. To enjoy its characteristic crisp texture, it is recommended to eat it raw in salads or as ohitashi (boiled and seasoned greens) or dressed vegetables. It can also be used with sakura shrimp in kakiage (tempura fritters) to create a colorful and spring-like dish.
Even though it marks the beginning of spring, this season still has many cold days, with lingering winter effects. Facial massage to relax the muscles around the eyes, or rubbing and massaging around the ears, neck, armpits, and the roots of the legs to smooth lymph flow, can help you feel relaxed. Spring is the season of beginnings, so relax both body and mind and challenge new things with a fresh mindset.
