梅のつぼみがほころぶ季節となり、春の訪れが待ち遠しく感じつつも、なお厳しい寒さが続きます。ニュースでもインフルエンザの流行や空気の乾燥が報道されています。
のどの痛みが気になるときに、思い出す食品の一つがきんかんではないでしょうか。きんかんは、日本へは薬として鎌倉時代末期に渡来し、「風邪が流行るとキンカンが売れる」と昔から言われ、のどの渇きを止め、炎症を静めて、咳、痰、扁桃炎などを改善する風邪の妙薬として利用されてきました。これは、ビタミンC、 B1、B2、E、ヘスペリジン(ビタミンP)、カルシウムを豊富に含み、非常に栄養価が高く、免疫力を高め、血管や粘膜を強化して風邪ひき予防に役立つことが確かめられているからです。
今でも風邪をひいたときに、蜜煮にしたきんかんに熱湯を注いで飲む民間療法があります。おせち料理にも蜜煮のきんかんが添えられますが、冬に多いインフルエンザや風邪を予防するための先人の知恵だと言えるでしょう。きんかんは皮ごと食べられるのが特徴で、皮に実を上回る有効成分が含まれています。甘露煮やはちみつ漬けなどは、皮ごと食べられる理想的な調理法です。また、きんかんは色が鮮やかなので、そのままスライスしてオリーブオイル、塩、コショウで味付けし、お刺身やお野菜とマリネにしても、彩がきれいで美味しい一品となるでしょう。ほのかな苦みと甘みが美味しいきんかん、ぜひ体調管理に活用してみてください。

Kumquat

As the plum buds begin to bloom, we eagerly await the arrival of spring, yet the severe cold persists. News reports also cover the spread of influenza and dry air.

When concerned about a sore throat, one food that comes to mind is the kumquat. Kumquats were introduced to Japan as a medicinal plant at the end of the Kamakura period. It has been said for a long time, "When colds spread, kumquats sell well." They have been used as a miraculous remedy for colds, alleviating throat dryness, reducing inflammation, and improving coughs, phlegm, and tonsillitis. This is because they are rich in vitamins C, B1, B2, E, hesperidin (vitamin P), and calcium, making them highly nutritious, boosting immunity, and strengthening blood vessels and mucous membranes to help prevent colds.

Even today, a folk remedy exists where hot water is poured over candied kumquats when a cold occurs. Candied kumquats are also included in New Year's dishes, reflecting the wisdom of predecessors in preventing the influenza and colds common in winter. Kumquats are distinctive because they can be eaten whole, and the skin contains more active ingredients than the fruit itself. Cooking methods such as simmering in syrup or soaking in honey, which allow consumption with the skin, are ideal. Additionally, due to their bright color, kumquats can be sliced and seasoned with olive oil, salt, and pepper for use in sashimi or vegetable marinades, creating a beautiful and tasty dish. With their subtle bitterness and sweetness, kumquats are perfect for maintaining your health.
