黄鲔(Buri)
年末将近,年节料理的食材也开始出现在商店。“师走”一词体现了年底的忙碌,但迎接新年的喜悦也让人心情轻快。本次介绍的食材是北陆至西日本正月庆祝使用的黄鲔。
黄鲔是一种随成长而更名的“升世鱼”,从“稚鲔(Hamachi)”到“若鲔(Warasa)”再到“黄鲔(Buri)”。它是日本近海分布的鲹科高档海鱼,经冬季狂浪锤炼的“寒黄鲔”味道极佳。《本朝食鉴》中记载:“滋养气血,使身体健康肥壮”,被认为能改善虚弱及贫血的人群。黄鲔脂肪含量高,热量较高,但脂肪组成包含EPA和DHA等不饱和脂肪酸,有助于降低血中胆固醇,预防动脉硬化和高血压。富含能恢复疲劳的维生素B群、促进钙吸收的维生素D、预防贫血的铁,鱼血部位还含有改善肝功能的牛磺酸。此外,鱼头及中骨等部位富含胶原蛋白,因此鱼头及鱼骨可用于煮汤或炖煮料理,不浪费食材。用黄萝卜炖制的“黄鲔萝卜”、用味醂与酱油调制的酱汁腌制再烤的“照烧黄鲔”都是黄鲔的经典料理。将腌制的蕪头与腌制的黄鲔夹在一起,并用米曲发酵制成的“蕪寿司”是北陆的传统发酵食品。此外,黄鲔不仅适合日式料理,也适合西餐,如黄油酱油烤黄鲔或生鱼片制作Carpaccio都非常美味。
不过,如果胃不太好,可能会增加胃的负担,因此需注意不要过量食用。

最近、「フレイル」という言葉をよく聞くようになりました。フレイルとは、加齢とともに心身の活力が低下し、生活機能障害、要介護状態、死亡などの危険性が高まった状態です。今回は、2018年11月28日に実施された「第152回老年学・老年医学公開講座 『フレイル』ってなに?~自立した老後を過ごすための予防、診断、対策~」に基づいて、3回にわたってお話します。
気になる旬の食材
ぶり
年の瀬が近くなり、お正月料理の食材が店頭に並ぶようになりました。「師走」の名の通りせわしくなりつつも、新しい年を迎える喜びに何となく心が浮き立つ季節です。今回は、北陸~西日本の正月のお祝いで使われるぶりについてお話します。
いなだ(はまち)、わらさ、ぶりと成長とともに名前を変える出世魚。日本近海に分布するアジ科の高級魚で、冬の荒波にもまれた「寒ぶり」は絶品と言えるでしょう。江戸時代の薬物書『本朝食鑑』には「気血を潤し、健やかに肥らせる」と記され、元気がなく貧血気味の人を健康にする魚と考えられてきました。脂質が多いためにカロリーは高いものの、脂質の組成はEPAとDHAなどの不飽和脂肪酸で、血中コレステロール値を減らし、動脈硬化や高血圧を防ぐ良質な脂肪です。疲労回復に効果があるビタミンB群、カルシウムの吸収を促進するビタミンD、貧血を予防する鉄が多く含まれ、血合いには肝機能の改善にすぐれた効果のあるタウリンも多く含みます。また、頭や中骨といったあらの部分には、コラーゲンが多く含まれていますので、あらや頭も、汁や煮物で残さず利用するようにしましょう。ぶりのあらを大根とともに甘辛く煮詰めた「ぶり大根」、みりんと醤油を合わせたたれに漬け焼きにした「ぶりの照り焼き」はぶりの定番の料理ですね。塩漬けしたカブに、塩漬けしたぶりを挟み、米糀で漬け込んで発酵させた「かぶらずし」は、北陸伝統の発酵食品です。また、ぶりは和食だけではなく洋食としても相性がいいので、バター醤油焼きやお刺身をカルパッチョにしても美味しくいただけるでしょう。
ただし、胃が丈夫でない場合は胃の負担になる場合もありますので、食べすぎには気を付けるようにしましょう。

Yellowtail (Buri)
As the end of the year approaches, ingredients for New Year dishes begin to appear in stores. True to the name "Shiwasu" (the busy last month of the year), it is a hectic period, yet our hearts lift with the joy of welcoming the new year. This time, we talk about yellowtail (buri), used in New Year's celebrations from Hokuriku to western Japan.
Young yellowtail are called inada (hamachi) and warasa, with the fish taking different names as it grows—a so-called "career fish." Yellowtail, a premium fish of the jack family found in the waters near Japan, is at its best in winter when battered by rough waves (known as "kan-buri"). The Edo-period medicinal text "Honchō Shokkan" notes that it “moistens the vital energy and blood and helps one grow healthy and plump,” and it has long been considered a fish that improves health for those with low energy or anemia. Although high in calories due to its abundant fat, the fat is composed of unsaturated fatty acids such as EPA and DHA, which reduce blood cholesterol and prevent arteriosclerosis and high blood pressure. Yellowtail also contains B vitamins effective for fatigue recovery, vitamin D to aid calcium absorption, and iron to prevent anemia. The dark meat contains taurine, which is beneficial for liver function. Additionally, collagen is abundant in the heads and bones, so these parts should also be used in soups or stews rather than discarded. Classic yellowtail dishes include "Buri Daikon," where the bony parts are simmered with daikon radish in a sweet-salty sauce, and "Buri Teriyaki," grilled after marinating in a mixture of mirin and soy sauce. "Kabura-zushi," a traditional fermented dish from Hokuriku, sandwiches salted yellowtail between salted turnips and ferments them with rice malt. Yellowtail pairs well not only with Japanese cuisine but also with Western dishes, such as butter-soy grilled yellowtail or sashimi prepared as carpaccio.
However, those with sensitive stomachs should be cautious, as it can be heavy on the stomach if consumed in excess.
