花生

花生是豆科一年生植物,夏季开黄色的花后,从花的基部伸出粗如针状的子房柄扎入地下结实。带壳的称为花生,去壳但带褐色薄皮的称为南京豆,去薄皮的则称为花生米。

在药膳中,花生被认为可以调理脾胃功能,润肺,对因干燥引起的咳嗽和痰有疗效。秋季空气容易干燥,容易引起咳嗽感冒或哮喘加重,因此花生是一种非常适合防治此类季节性健康问题的食材。此外,花生的营养非常均衡。蛋白质约占25%,脂肪约占47%,其中大部分脂肪酸是不饱和脂肪酸(油酸、亚油酸)。不饱和脂肪酸可降低胆固醇,有助于预防动脉硬化。不过,由于脂肪较多且不易消化,食用过量需注意。花生的薄皮中富含抗氧化物质,因此最好连皮一起食用。

花生通常炒着吃或盐水煮食,将其用食品处理器打成糊状后,可混入调味料制成沙拉酱,或加入蜂蜜制成自制花生酱,增加食用方式。将糊状花生直接加入味噌汤,也能轻松摄取其营养。此外,可用花生代替大豆,与鸡肉、时令根菜和蘑菇一起做五目煮,成为一道秋季特色菜。食用量因人而异,但一般每天10~20颗为宜。注意不要吃太多,将富含营养的花生纳入零食或料理中。

気になる旬の食材

落花生

落花生はマメ科の一年草で、夏に黄色い花を咲かせた後、花の根元から太い針のような子房柄を地中に伸ばして結実します。殻のついたものを落花生、殻から出して渋皮のついた状態のものを南京豆、渋皮を取り除いたものをピーナッツと言います。
落花生は、薬膳では脾・胃の働きを整え、肺を潤して乾燥による咳や痰に効果があるとされます。秋は空気が乾燥しやすく、咳風邪をひいたりぜんそくが悪化しやすいので、この季節のトラブルを防ぐのにぴったりの食材と言えるでしょう。また、落花生は栄養的に非常によくバランスが取れています。タンパク質が約25%、脂肪が約47%で、脂肪酸の多くは不飽和脂肪酸(オレイン酸、リノール酸)が占めています。不飽和脂肪酸はコレステロールを減らし、動脈硬化の予防に役立ちます。ただし、脂肪分が多く消化が悪いため、食べすぎには注意しましょう。渋皮には抗酸化物質が豊富に含まれますので、ぜひ皮ごと食べるようにするといいでしょう。
落花生は炒めたり塩ゆでにしていただくのが一般的ですが、フードプロセッサーを使ってペースト状にすると、調味料を混ぜてドレッシングにしたり、はちみつを混ぜて自家製ピーナッツバターにして活用の幅が広がります。ペーストをそのまま味噌汁に入れても、手軽に落花生の栄養を摂ることができます。また、大豆の代わりに落花生を使って、鶏肉、旬の根菜やきのこと一緒に五目煮にすると秋らしい一品になります。食べる量は、個人差がありますが一日に10~20粒が適量と言われます。食べすぎに気を付けて、栄養の豊富な落花生をおやつや料理に取り入れてみてください。

Peanuts

Peanuts are annual plants of the legume family. After blooming yellow flowers in summer, they extend a thick, needle-like ovary stalk into the ground from the base of the flower to bear fruit. Peanuts with shells are called peanuts, those shelled but with the red skin are called nankin beans, and those with the red skin removed are called peanuts.

In medicinal cooking, peanuts are said to regulate the functions of the spleen and stomach, moisturize the lungs, and be effective against coughs and phlegm caused by dryness. Autumn air tends to be dry, which can worsen coughs or asthma, so this makes peanuts a perfect ingredient to prevent seasonal troubles. Nutritionally, peanuts are very well-balanced. About 25% is protein and about 47% is fat, much of which consists of unsaturated fatty acids (oleic acid, linoleic acid). Unsaturated fatty acids help reduce cholesterol and prevent arteriosclerosis. However, because they are high in fat and hard to digest, overeating should be avoided. Since the red skin contains abundant antioxidants, it is recommended to eat them with the skin on.

Peanuts are generally enjoyed roasted or boiled with salt, but they can be made into a paste using a food processor, mixed with seasonings to make dressings, or with honey to make homemade peanut butter, expanding their versatility. Simply adding the paste to miso soup is also an easy way to consume peanut nutrition. Additionally, replacing soybeans with peanuts and simmering them with chicken, seasonal root vegetables, and mushrooms creates a dish perfect for autumn. The appropriate daily intake varies per individual, but 10–20 peanuts a day is generally considered suitable. Be mindful not to overeat, and try incorporating these nutritious peanuts into snacks and meals.
