由于土豆在荒地也能生长,生命力极强,因此可以说是世界上种植最广的作物。据说土豆在日本是从庆长年间由荷兰引入的。全年都可以在店面看到土豆,但嫩土豆在初夏这个季节才能享用。本文将介绍土豆的营养和烹饪方法。
在法国,土豆被称为“土地上的苹果”,含有丰富的维生素C。土豆中的淀粉可以包裹维生素C进行保护,因此加热后不易被破坏。此外,摄入丰富的土豆钾可以促进钠的排泄,从而有助于预防高血压和浮肿。但土豆的芽和绿色部分的皮含有龙葵碱或查可宁等强毒性的马铃薯生物碱(PGA)。摄入一定量后可能会引起头痛、腹痛甚至呕吐,因此烹调时需去掉芽并充分削除绿色部分的皮。
土豆可制成土豆沙拉、粉蒸土豆作为配菜,也可制成可乐饼、肉土豆煮等作为主菜享用。新土豆的皮较软,推荐整块食用。将整颗新土豆用蒜和橄榄油炒,加上凤尾鱼制作的凤尾鱼土豆,是绝佳的组合。或将新土豆切半,加入黄油炒制,再用酱油、糖和味淋调味,制成甜咸土豆,是大人和孩子都喜欢的菜品。当有浮肿或高血压问题时,可将土豆和海带加入洋葱味噌汤中,利用土豆与海带的协同作用促进钠排泄。洋葱还有促进血液循环的效果,使这道菜更加健康。请在初夏尝试各种新土豆料理吧!

じゃがいも
荒地でも育つ生命力の強さから、じゃがいもは世界中で最も多く栽培されている作物と言えるでしょう。日本には慶長年間にオランダからもたらされたと言われます。年間を通して店頭で見られますが、みずみずしい新じゃがが楽しめるのは初夏の今の季節だけ。今回は、じゃがいもの栄養と料理についてご紹介します。
じゃがいもはフランスでは「大地のリンゴ」と呼ばれ、多くのビタミンCが含まれます。じゃがいもに含まれるでんぷんはビタミンCをくるむようにして保護するため、熱を加えても破壊されにくいという特徴があります。また、じゃがいもに含まれるカリウムを多く摂ると、塩分に含まれているナトリウムが排泄されるため、高血圧やむくみの予防に役立ちます。ただし、じゃがいもの芽の部分や、緑色をした皮の部分にはソラニンやチャコニンなどのポテトグリコアルカロイド(PGA)という毒性が強い成分が含まれています。一定量を摂取すると、頭痛や腹痛だけでなく、吐いたりすることもありますので、調理するときに芽は取り除き、緑の部分は厚めに皮をむくようにしましょう。
じゃがいもは、ポテトサラダや粉ふきいもにして副菜に、また、コロッケや肉じゃがにして主菜にするなど、様々な食べ方で楽しめますが、新じゃがは皮も柔らかいので、丸ごといただく料理がおすすめです。丸ごとゆでた新じゃがをにんにくとオリーブオイルでいため、アンチョビを加えたアンチョビポテトは絶妙な組み合わせが楽しめます。また、新じゃがを半分に切ってバターでいため、しょうゆ、砂糖、みりんで味付けた甘辛じゃがいもは、大人から子供まで幅広く喜ばれるメニューの一つでしょう。むくみや高血圧が気になるときは、じゃがいもとわかめに玉ねぎを加えてお味噌汁にすると、じゃがいもとわかめの相乗効果で塩分の排出に効果的です。たまねぎにも血行促進効果があるので、より効果が期待できる一品になるでしょう。初夏の味、新じゃがをいろいろなお料理で楽しんでみてください!

Potatoes
Due to their strong life force that allows them to grow even in barren land, potatoes can be said to be the most widely cultivated crop in the world. It is said that potatoes were brought to Japan from the Netherlands during the Keichō period. While they are available in stores throughout the year, the juicy new potatoes can be enjoyed only in early summer, the current season. This time, we will introduce the nutrition and cooking methods of potatoes.
Potatoes are called 'the apples of the earth' in France and contain a lot of vitamin C. The starch in potatoes protects the vitamin C, making it less likely to be destroyed by heat. Moreover, consuming potatoes rich in potassium helps in excreting sodium contained in salt, which is useful for preventing high blood pressure and swelling. However, the sprouts and green parts of potato skins contain potent toxic components called potato glycoalkaloids (PGA), such as solanine and chaconine. Consuming a certain amount can cause not only headaches and abdominal pain but also vomiting, so when cooking, remove the sprouts and peel the green parts thickly.
Potatoes can be enjoyed in various ways, such as side dishes like potato salad or boiled potatoes, or main dishes like croquettes and meat-and-potato stew. Since new potatoes have tender skins, dishes that use them whole are recommended. Boiling new potatoes whole and sautéing them with garlic and olive oil along with anchovies creates an exquisite combination known as anchovy potatoes. Additionally, cutting new potatoes in half, sautéing them in butter, and seasoning with soy sauce, sugar, and mirin to make sweet and savory potatoes is a popular dish for both adults and children. If you are concerned about swelling or high blood pressure, making miso soup with potatoes, seaweed, and onions can be effective, as the combination of potatoes and seaweed helps excrete sodium. Onions also promote blood circulation, making it an even more effective dish. Enjoy the flavors of early summer new potatoes in various recipes!
