気になる旬の食材 りんご

みかんとならんで冬の定番の果物、りんご。日本で本格的に栽培が始まったのは明治以降ですが、西洋では4000年前以上からと非常に歴史が深く、旧約聖書のアダムとイブの禁断の果実、白雪姫、そしてニュートンが万有引力を発見した逸話など、様々な場面で登場します。「1日1個のリンゴは医者知らず」(”An apple a day keeps the doctor away.”)という諺があるほど健康維持に効果のある果物として親しまれてきました。成分は食物繊維のペクチンを多く含み、消化を促進したり、胸のむかつきや不快感を解消するなど整腸作用があります。また、カリウムも多く含まれることから、相乗効果で血圧やコレステロールの低下も期待できます。風邪で胃腸が弱り、食欲がないときにリンゴのおろし汁を飲むことは、リンゴの栄養を活用した昔ながらの知恵と言えるでしょう。そのまま食べてももちろん美味しいですが、りんごのペクチンは加熱することでより効果が高まるため、レモンや砂糖と煮詰めてコンポートにしたり、豚肉とソテーにしてみても意外な美味しさが楽しめます。また、リンゴからつくられるりんご酢には疲労回復や高血圧予防効果があり、はちみつと合せて美味しい健康ドリンクにするのもお勧めです。

Seasonal Food Spotlight: Apple

Alongside mandarins, apples are a classic winter fruit. Full-scale cultivation in Japan began after the Meiji era, but in the West, apples have a very long history of over 4,000 years. They appear in various settings, such as the forbidden fruit of Adam and Eve in the Old Testament, Snow White, and the story of Newton discovering gravity. The proverb "An apple a day keeps the doctor away" reflects how cherished this fruit has been for its health benefits. Apples are rich in the dietary fiber pectin, promoting digestion and alleviating chest discomfort, thus aiding intestinal health. Additionally, as they contain a lot of potassium, they can be expected to help lower blood pressure and cholesterol through synergistic effects. Drinking grated apple juice when your stomach is weak from a cold and you have no appetite is an old wisdom using the nutrition of apple. Eating them as-is is, of course, delicious, but the effect of apple pectin increases when heated, so trying compote with lemon and sugar or sautéing with pork can offer surprisingly delicious results. Moreover, apple cider vinegar made from apples has effects in fatigue recovery and prevention of high blood pressure, and mixing it with honey makes a delicious health drink.
