気になる旬の食材 いわし

まだまだ寒い日が続きますが、節分が近づいてきましたね。節分には、豆まきや恵方巻きなどの習慣がありますが、いわしの頭をヒイラギの葉にさして軒下の吊るす「柊鰯」の風習が古くからあります。これは、邪気を追い払うためと言われますが、栄養が豊富ないわしは、まさに病気を予防するためにも役立つ、この季節に理想的な食材でしょう。鉄分が豊富で、疲れやすい、だるい、食欲不振などの症状に効果的です。魚肉に含まれる鉄分はヘム鉄で吸収されやすいのが特長です。また、いわしは近年話題になっているEPAやDHAも豊富で、血液をサラサラにしたり悪玉コレステロールを減らすことが明らかになっています。そのまま塩焼きにして大根おろしを添えても美味しくいただけますし、三枚おろしにしたいわしをすり鉢ですって団子にし、大根や人参、ごぼうなどいろいろなお野菜と煮てつみれ汁にしても栄養たっぷりです。

However, in recent years, many young people face numerous temptations, stimuli, and stress in a rapidly changing environment, which can affect both mental and physical health. This time, we will consider "adolescence and young adulthood" from various perspectives.

Seasonal Ingredient of Interest: Sardines

Although it is still cold, Setsubun is approaching. During Setsubun, there are customs such as bean throwing and eating Ehomaki, but there is also the old tradition of hanging sardine heads on holly leaves under the eaves, known as "Hiiragi-Iwashi." This is said to ward off evil spirits. Sardines, rich in nutrients, are an ideal food for preventing illnesses in this season. They are high in iron, effective for symptoms such as fatigue, lethargy, and loss of appetite. The iron in fish is heme iron, which is easily absorbed. Additionally, sardines are rich in EPA and DHA, which have been highlighted in recent years, and are known to help thin the blood and reduce bad cholesterol. They can be enjoyed simply grilled with grated daikon, or made into fish ball soup by grinding filleted sardines in a mortar and simmering with daikon, carrots, burdock, and other vegetables for a nutritious dish.
