There is a saying that "eating pumpkin on the winter solstice prevents colds." Pumpkin is rich in vitamin E, beta-carotene, and vitamin C, making it an exceptionally nutritious food. Among vegetables, it is a notable source of vitamin A, especially in the outer and skin portions. Vitamin E dilates blood vessels and warms the body, beta-carotene protects mucous membranes and prevents infections, and vitamin C boosts immunity to prevent colds. In this period, when green and yellow vegetables are scarce, the custom of eating pumpkin on the winter solstice can be regarded as the wisdom of the ancients. The beta-carotene and vitamin E in pumpkin are more easily absorbed when cooked with oil, so it is recommended to fry or sauté it. Traditional dishes such as "Itokoni," in which pumpkin is simmered sweetly with red beans, are a perfect combination, and making pumpkin into potage or gratin is ideal for this season. It can also be mixed with yogurt to make a refreshing salad.
