■ Seasonal Food Spotlight: Sweet Potato
Sweet potatoes were brought to Japan by the Portuguese in the early Edo period. During famines and poor harvests, their rich nutritional content saved lives as emergency food. Recently, due to their high dietary fiber content, they have gained attention as a food that can help prevent constipation, colorectal cancer, and lifestyle-related diseases. They are also rich in vitamin C, which is effective in preventing colds, and unlike other vegetables, the vitamin C in sweet potatoes is resistant to loss when cooked. They are therefore suitable for this season when the body is prone to illness. Sweet potatoes can be enjoyed as snacks like baked sweet potato or sweet potato desserts, or incorporated into dishes like simmered foods and rice cooked with them. Additionally, sweet potato porridge, made by cooking bite-sized sweet potato cubes with rice, is gentle on the stomach and intestines and may have conditioning effects on the digestive system.
