10月号(e-健康かわら版vol.146)の本コラムで大腸がんの予防法に触れた直後の10月26日、「ホットドッグやソーセージなどの加工肉は大腸がんのリスクを高める」というニュースが世界を駆けめぐりました。その後も例えば、「ソーセージショック」の見出しでドイツの反応が報じられています(朝日新聞11月20日付)。この研究はWHOの専門機関が発表したもので、ソーセージやベーコンなどの「加工肉」が、たばこやアスベストと同様に「十分な根拠がある」がんの原因だと位置付けました。牛・豚などの「赤身肉」についても、「おそらく発がん性がある」と分類しました。
加工肉・赤身肉と大腸がんとの関連は、国内外ですでに指摘されていました。日本でも国立がん研究センターのグループが8万人のアンケートをもとに2011年、一定条件ではリスクが高まると報告しています。今回は「ホットドッグ」「ソーセージ」など具体的な品目名や、リスクがタバコやアスベストと同類にされたことが海外の人々の関心を引き付けたのかもしれません。
ひるがえって日本では、「欧米よりも摂取量は少ないので、食べ過ぎには注意が必要だが、極端な制限は必要ない」との見方に落ち着いているようです。肉類だけにこだわるのではなく、10月号で触れた運動や野菜・果物の摂取など「がん予防に働く」因子、そして肥満やアルコールといった「がんのリスクを上げる」因子の双方に目を配る必要があります。

Matters Concerning the Body – Processed Meats, Red Meats, and Colorectal Cancer

Immediately after touching on colorectal cancer prevention in the October issue (e-Health Kawaraban vol.146), on October 26, news spread around the world stating that "processed meats such as hot dogs and sausages increase the risk of colorectal cancer." Subsequently, for example, Germany's reaction was reported under the headline "Sausage Shock" (Asahi Shimbun, November 20). This study was announced by a WHO specialized agency, categorizing processed meats such as sausages and bacon as causes of cancer with "sufficient evidence," similar to tobacco and asbestos. Red meats such as beef and pork were classified as "probably carcinogenic."

The link between processed and red meats and colorectal cancer has already been noted both domestically and internationally. In Japan, a group at the National Cancer Center reported in 2011, based on a survey of 80,000 people, that under certain conditions the risk increases. This time, the mention of specific items like "hot dogs" and "sausages," and the classification of risk alongside tobacco and asbestos, may have attracted attention abroad.

In contrast, in Japan, the view seems to be that "since the intake is lower than in Western countries, caution against overeating is needed, but extreme restriction is unnecessary." It is important to pay attention not only to meat intake but also to factors that "contribute to cancer prevention," such as exercise and consumption of vegetables and fruits mentioned in the October issue, as well as factors that "increase cancer risk," such as obesity and alcohol.
