相比在城市柏油路上行走,在森林中散步更能使头脑清醒。对在美国犹他大学树木园散步的人进行观察发现,与在布满柏油的医学院校园行走的人相比,散步后与注意力相关的功能之一——执行控制有所改善,这从脑电图(EEG)测量中得到证实。犹他大学心理学领域的Amy McDonnell和David Strayer的研究结果发表于1月22日的《Scientific Reports》杂志。

这次介绍的是“酱油麻糬”。
进入三月,梅花逐渐退去,桃花的香气扑面而来。提到桃花节,许多地区会食用菱形麻糬和雏米果,但与桃花节相关的点心在日本各地都有不同的流传。这次介绍的是在爱媛县食用的“酱油麻糬”。
酱油麻糬是由上新粉、糖和酱油制成的松山乡土点心,据说始于江户时代初期,松山藩祖久松定胜在三月桃花节时,为祈祷家臣繁荣而制作并分发酱油麻糬庆祝。元禄时期,酱油麻糬也被用作供奉雏娃娃。此后直到现代,酱油麻糬一直在桃花节期间制作,各家各户都有食用的习惯。
材料和做法很简单,将上新粉、糖、盐与热水混合,蒸约20分钟。然后放入碗中加入酱油和姜汁搅拌,分成小块并整形成小判形等造型,再蒸一次即可完成。整形时可将其搓成长条或用筷子制作格子纹等。因店家或家庭而异,做法略有不同,但独特的口感柔软顺口,酱油香和姜味在口中弥漫。
现在作为松山名点在土产店出售,也有店铺销售带馅的酱油麻糬。

都会でアスファルトの上を歩くよりも森の中を散歩した方が、頭が冴えるようです。米ユタ大学の樹木園を散歩した人では、アスファルトだらけの医学部キャンパスを散歩した人に比べて、散歩後に、注意力に関係する機能の一つである実行制御が改善することが、脳波(EEG)の測定から明らかにされました。ユタ大学心理学分野のAmy McDonnell氏とDavid Strayer氏によるこの研究結果は、「Scientific Reports」に1月22日掲載されました。

しょうゆ餅(愛媛県)
不定期連載「食で巡る日本~郷土料理紀行~」。
今回は「しょうゆ餅」についてお話します。
3月になり、梅に代わって桃の花が香る季節になりました。桃の節句、というとひし餅やひなあられを食する地域も多いかと思いますが、桃の節句にまつわるお菓子も、日本各地で様々なものが伝わっています。今回は、愛媛県で食される「しょうゆ餅」についてお話しします。
しょうゆ餅は、上新粉、砂糖、醤油からつくられる松山の郷土菓子で、江戸時代初期に松山藩祖 久松定勝が、3月の桃の節句に家臣の繁栄を願って、しょうゆ餅をつくり分け与えて祝ったことが始まりとされています。元禄期にはお雛様に供えるものになったとも言われます。その後、現代にいたるまで桃の節句の時に作られるようになり、各家庭で親しまれてきました。
材料と作り方はシンプルで、上新粉、砂糖、塩に熱湯を入れて混ぜ合わせ、20分ほど蒸します。ボールにまとめてしょうゆ、しょうがのしぼり汁を加えて混ぜ、小さく分けて小判型などに形を整えて、もう一度蒸したら出来上がりです。形を整える際に、細長く捻ったり、割りばしで格子模様を付けるなどするようです。お店や家庭によって、作り方には細かな違いがあるようですが、独特の触感が口当たりよく、醬油の香りと生姜の風味が口に広がります。
現在では松山銘菓として土産物店でも売られており、あん入りのしょうゆ餅を販売する店もあるようです。

Does a Walk in Nature Restore Attention?
It seems that walking in a forest sharpens the mind more than walking on asphalt in the city. A study at the University of Utah found that those who walked through the arboretum showed improvements in executive control, a function related to attention, compared to those who walked on the medical school campus covered in asphalt, as measured by EEG. This research by Amy McDonnell and David Strayer of the psychology department at the University of Utah was published in Scientific Reports on January 22.

Soy Sauce Mochi (Ehime Prefecture)
This is an irregular series, “Traveling Japan through Food ~ Local Cuisine Journey ~.”
This time, we will talk about “Soy Sauce Mochi.”
With March arriving, it is the season when the scent of peach blossoms replaces that of plum blossoms. During the Peach Festival (Hinamatsuri), many regions enjoy pyramid-shaped rice cakes or hina-arare (colored rice crackers), and there are various sweets related to this festival across Japan. This time, we focus on “Soy Sauce Mochi” consumed in Ehime Prefecture.
Soy Sauce Mochi is a traditional sweet of Matsuyama made from rice flour (joshinko), sugar, and soy sauce. It is said to have originated in the early Edo period when Matsuyama Domain’s founder, Sadakatsu Hisamatsu, made soy sauce mochi in March for Hinamatsuri and distributed it to his retainers to wish for their prosperity. By the Genroku period, it became customary to offer them to Hina dolls. Since then, it has continued to be made during the Peach Festival and has been cherished in households.
The ingredients and preparation are simple: mix rice flour, sugar, and salt with boiling water and steam for about 20 minutes. After forming into a ball, add soy sauce and squeezed ginger juice, mix, divide into small pieces, shape into oblong forms, then steam again to finish. When shaping, the mochi may be twisted long or patterned with a chopstick lattice. Methods vary slightly by shop or household, but the unique texture is pleasant, and the aroma of soy sauce and ginger flavor spreads in the mouth.
Currently, it is sold at souvenir shops as a specialty of Matsuyama, and some stores even offer soy sauce mochi with red bean paste.
