在被称为人生百年的时代,和认知症一起生活或进行护理已经成为每个人都可能经历的身边事情。这次,我们介绍以人类原始行为“吃”“祈祷”“耕作”为关键词,构建认知症共生社会的最新研究成果——第159回老年学·老年医学公开讲座“吃、祈祷、耕作~由饮食、寺院和农园构建认知症共生社会”。三期系列中,这次是第二期——“祈祷Pray:寺院承担的共生形式”(东京都健康长寿医疗中心自立促进与精神保健研究团队 研究副部长 冈村 毅先生)。
■通过饮食游览日本~乡土料理纪行~
“煮馎饦”(埼玉县)
“馎饦”是山梨县的乡土料理,用面粉揉制成面团,切成平面条“馎饦面”,与丰富的配料一起用味噌汤煮熟,相信很多人都很熟悉。这次,我们介绍埼玉的乡土料理“煮馎饦”。
“煮馎饦”是埼玉县深谷的一道乡土料理,也被称为“武州煮馎饦”,适合在相对容易获得面粉的地区制作。山梨的“馎饦”是味噌味,而深谷的“煮馎饦”是酱油味,使用宽面条(约2.5厘米,厚度约1.5毫米),以及富有特色的深谷葱为主,加入当地收获的各类根茎类蔬菜,从生面开始煮食。由生面开始煮,可以产生适度的浓稠口感,使口感顺滑,食欲增加。肉类根据家庭不同也有各种选择,多用鸡肉。据说来自深谷的明治时期企业家渋沢栄一也很喜欢吃,每年的纪念日仍会举行“煮馎饦聚会”,通过吃“煮馎饦”缅怀他的美德。
用一锅即可轻松放入家中当季蔬菜制作,能从肉类和蔬菜中摄取多种营养。虽然寒冷的天气持续,但请一定用“煮馎饦”来温暖身体吧。

人生100年時代と言われる今、認知症と共に生きることや介護をすることは、誰もが経験しうる身近なことになりました。今回は、人間にとっての原始的な営みである「食べること」「祈ること」「耕すこと」をキーワードとした、認知症共生社会を作るための最新の研究を紹介した第159回老年学・老年医学公開講座「食べて、祈って、耕して~食と寺院と農園が作る認知症共生社会」を3回にわたってご紹介します。第2回は、「祈ってPray:寺院が担う共生のカタチ」(東京都健康長寿医療センター自立促進と精神保健研究チーム 研究副部長 岡村 毅氏)をご紹介します。
■食で巡る日本~郷土料理紀行~
「煮ぼうとう」(埼玉県)
「ほうとう」は山梨県の郷土料理で、小麦粉を練り、平らに切った「ほうとうめん」を、たっぷりの具材とともに味噌仕立ての汁で煮こんだもので、ご存知の方も多いかと思います。今回は、埼玉の郷土料理、「煮ぼうとう」をご紹介します。
「煮ぼうとう」は、比較的容易に小麦粉を手に入れることができた土地ならではの、埼玉県深谷に伝わる郷土料理で、「武州煮ぼうとう」とも呼ばれます。山梨の「ほうとう」は味噌味ですが、深谷の「煮ぼうとう」はしょうゆ味で、幅広の麺(およそ2.5センチ、厚さ1.5ミリ程度)と、特産である深谷ねぎをはじめ、地元で収穫される根菜類をたっぷり使い、生麺の状態から煮込んでいただきます。生麺から煮込むことで、適度なとろみが生まれるので、なめらかな喉越しで食が進みます。肉は、家庭によっていろいろなようですが、鶏肉を使うことが多いようです。深谷出身の明治の実業家・渋沢栄一翁も好んで食べたそうで、今でも栄一翁の命日には、「煮ぼうとうの会」が催され、「煮ぼうとう」を食べて遺徳をしのんでいるということです。
1つの鍋で、家にある季節の野菜を入れて手軽に作ることができ、肉や野菜からいろいろな栄養を摂取することができます。厳しい寒さが続きますが、ぜひ、「煮ぼうとう」で温まってみてください。

144) "Eat, Pray, Cultivate" ~ A Dementia-Friendly Society Created by Food, Temples, and Farms (Part 2)
In this era where people are said to live up to 100 years, living with dementia or providing care for someone with dementia has become something that anyone may experience. This time, we introduce the latest research on creating a dementia-friendly society using the keywords "eating," "praying," and "cultivating," which are primitive human activities. We will present the 159th Public Lecture on Gerontology and Geriatric Medicine, "Eat, Pray, Cultivate: A Dementia-Friendly Society Created by Food, Temples, and Farms," in three parts. The second part introduces "Pray: The Role of Temples in Coexistence" by Mr. Takeshi Okamura, Deputy Head of the Independence Promotion and Mental Health Research Team at the Tokyo Metropolitan Institute of Gerontology.

"Niboutou" (Saitama Prefecture)
"Houtou" is a traditional dish from Yamanashi Prefecture, made by kneading wheat flour, cutting it into flat noodles called "houtou-men," and simmering them in a miso-based soup with plenty of ingredients, which may be familiar to many people. This time, we introduce Saitama's local dish, "Niboutou."
"Niboutou" is a local dish from Fukaya in Saitama Prefecture, where wheat flour was relatively easy to obtain, and it is also called "Bushu Niboutou." While Yamanashi's "Houtou" is miso-flavored, Fukaya's "Niboutou" is soy sauce-flavored, using wide noodles (about 2.5 cm wide and 1.5 mm thick) and plenty of local root vegetables, including the local specialty Fukaya green onions, simmered from the raw noodle stage. Simmering from raw noodles creates a moderate thickness, resulting in a smooth texture that makes it easy to eat. Meat varies by household, but chicken is often used. It is said that Eiichi Shibusawa, a businessman from the Meiji era who was from Fukaya, also enjoyed eating this, and even today, on the anniversary of his death, a "Niboutou Gathering" is held to eat "Niboutou" in memory of his virtues.
It can be easily made in a single pot using seasonal vegetables on hand, and various nutrients from meat and vegetables can be obtained. Although the cold weather continues, please try warming yourself with "Niboutou."
