■ 日本美食巡礼~地方料理纪行~

Shimozukare(茨城县)

新年、节分……冬季活动连绵不断。这次,我们将介绍茨城县传承的“Shimozukare”,以及先人们如何巧妙利用新年剩余的食材和节分的豆子制作美食。

“Shimozukare”是茨城县西部地区的地方料理,用正月剩下的鲑鱼头、节分撒下的豆子剩余以及根菜等食材,再加酒糟炖煮而成。它体现了先人珍惜剩余食材的智慧,同时也擅长冬季营养补充及保存。根据地区不同,也被称为“Sumitsukare”。“Shimozukare”不仅在茨城县制作,日本的栃木县、埼玉县和千叶县部分地区也有制作。据《宇治拾遗物语》(镰仓时代撰写)等古代说话记载,历史非常悠久,对于其名称的由来也有多种说法:一种说法是源自“作为下野国(现栃木县)家庭例行制作的料理”,因此称为“Shimozukare”;另一种说法是因为制作方法为“醋腌制”,因此称为“Sumitsukare”。

用被称为“鬼卸”的竹制锐利刃具将大根和胡萝卜粗略磨碎,油炸豆腐切成短条,与大豆及鲑鱼头一起,使用酒糟和高汤炖煮而成。若没有鲑鱼头,也可用鲑鱼切块,同样美味。鲑鱼深受日本人喜爱,其红色成分虾青素具有强抗氧化作用,可清除被认为是万病之源的活性氧,增强免疫力,激活全身。此外,鲑鱼还含有丰富的不饱和脂肪酸和维生素,可促进血液循环。“Shimozukare”是一道将鲑鱼营养充分吸收,同时摄取蔬菜及油豆腐营养的绝品滋补料理。

鲑鱼头被认为能驱除不祥之物,节分的豆子也意味着“魔灭(消灭邪魔)”,因此“Shimozukare”被视为吉祥食物而食用。

人生100年時代と言われる今、認知症と共に生きることや介護をすることは、誰もが経験しうる身近なことになりました。今回は、人間にとっての原始的な営みである「食べること」「祈ること」「耕すこと」をキーワードとした、認知症共生社会を作るための最新の研究を紹介した第159回老年学・老年医学公開講座「食べて、祈って、耕して~食と寺院と農園が作る認知症共生社会」を3回にわたってご紹介します。第1回は、「食べて Eat:食べて育む生きるチカラ」(東京都健康長寿医療センター研究員 枝広 あや子氏)をご紹介します。。

食で巡る日本~郷土料理紀行~

しもつかれ(茨城県)

お正月、節分…と冬の行事が続きます。今回は、お正月料理の残りや節分の豆を美味しくいただく先人の知恵、茨城県に伝わる「しもつかれ」をご紹介します。

「しもつかれ」は、正月の残りの鮭の頭に、節分でまいた豆の残り、そして根菜などを酒粕で煮こんだ茨城県西部地域に伝わる郷土料理です。正月からの残り物を大事に使い、また、冬場の栄養摂取や保存性に優れた先人の知恵がつまった料理といえるでしょう。地域によっては「すみつかれ」とも呼ばれています。「しもつかれ」は、茨城県だけでなく、栃木県や埼玉県、千葉県の一部でもつくられているようです。鎌倉時代に書かれた「宇治拾遺物語(うじしゅういものがたり)」などの説話にも記述されているなど、歴史は非常に古いため、その名の由来については諸説ありますが、「下野国(しもつけのくに:現栃木県)の家例としてつくる料理」から「しもつかれ」と呼ばれたという説や、つくり方の「酢み漬け」から「すみつかれ」と呼ばれたという説などがあります。「鬼おろし」と呼ばれる竹製の鋭利な刃がついたおろし器で粗くすり下ろした大根と人参、短冊切りにした油揚げを、大豆および鮭の頭とともに、酒粕、だし汁で煮こんでいただきます。鮭の頭がない場合は、鮭の切り身でも美味しくいただけます。鮭は日本人に広く親しまれ、鮭の赤い色を作り出すアスタキサンチンは抗酸化作用が高く、万病の元とされる活性酸素を除去して免疫力を高め、全身を活性化する働きがあります。また、血液循環を良くする不飽和脂肪酸やビタミン類も多く含まれることが知られています。「しもつかれ」は、鮭の栄養を無駄なく取り入れ、併せて野菜や油揚げの栄養もいただける絶品の滋養食です。
鮭の頭は悪いものを追い払うとされ、節分の豆も“魔滅(魔を滅する)”を意味することから、「しもつかれ」は縁起物として食べられていました。

This time, we will introduce the latest research aimed at creating a dementia-friendly society, centered around the primitive human activities of "eating," "praying," and "cultivating," from the 159th Public Lecture on Geriatrics and Gerontology entitled "Eat, Pray, Cultivate ~ A Dementia-Friendly Society Created by Food, Temples, and Farms," to be presented in three parts. The first installment introduces "Eat: Nurturing the Power to Live through Eating" (Ayako Edahiro, Researcher, Tokyo Metropolitan Institute of Gerontology).

Shimotsukare (Ibaraki Prefecture)

Winter events like New Year's and Setsubun continue during this season. This time, we will introduce the wisdom of our ancestors in making the most of leftover New Year's dishes and beans from Setsubun, focusing on "Shimotsukare," a dish transmitted in Ibaraki Prefecture.

"Shimotsukare" is a local dish from the western region of Ibaraki Prefecture, made by simmering leftover salmon heads from New Year's, leftover beans from Setsubun, and root vegetables in sake lees. It is a dish that makes good use of leftovers from New Year's meals and embodies the wisdom of ancestors for winter nutrition and preservation. Depending on the region, it is also called "Sumitsukare." Shimotsukare is not only made in Ibaraki Prefecture but also in parts of Tochigi, Saitama, and Chiba Prefectures. The dish has a very long history, mentioned in ancient tales such as the 13th-century "Uji Shūi Monogatari," and there are various theories about the origin of its name. Some say it was called "Shimotsukare" from "a dish made as a household example in Shimotsuke Province (present-day Tochigi Prefecture)," while others say it was called "Sumitsukare" because of the method of pickling with vinegar.

The dish is made by coarsely grating daikon radish and carrots with a bamboo grater called an "Oni Oroshi," adding sliced fried tofu, soybeans, and salmon heads, then simmering them all in sake lees and dashi broth. If salmon heads are unavailable, fillets can also be used. Salmon is widely enjoyed in Japan, and its red pigment astaxanthin has high antioxidant properties, removing reactive oxygen species that are considered a source of disease and boosting immunity while revitalizing the whole body. Salmon also contains unsaturated fatty acids and vitamins that improve blood circulation. Shimotsukare is a gourmet nutrient-rich dish that efficiently incorporates the nutrition of salmon along with vegetables and fried tofu.

Salmon heads are believed to ward off evil, and the beans used during Setsubun symbolize the expulsion of evil spirits, so Shimotsukare has been eaten as a good-luck dish.
