青森县 煎饼汤
煎饼汤是青森县八户周边地区的乡土汤品,用用麦或荞麦制作的煎饼掰碎后放入汤中烹煮而成。近年来,当地特产南部煎饼常被用来制作煎饼汤。
南部煎饼是青森县东南部到岩手县北部曾为旧南部藩领地的传统食品,用小麦粉加入盐和水,放入铁制模具中烤制成圆形。据说江户后期,由于连年饥荒和歉收,稻米收成困难,包括现在的八户市及周边地区的南部地区广泛种植麦和荞麦。收获的麦粉和荞麦粉用于制作松软的麦煎饼或荞麦煎饼,到了明治时期,硬烤的南部煎饼便诞生了。
煎饼曾是稻米产量不高地区的重要保存食品,把它放入味噌汤或火锅中煮制,就形成了“煎饼汤”。
煎饼汤中使用了牛蒡、胡萝卜、长葱、卷心菜和香菇等蔬菜,以及鸡肉、鲭鱼等食材。所使用的蔬菜中富含丰富的营养,如牛蒡的膳食纤维、卷心菜的维生素类、胡萝卜的胡萝卜素。煮过的南部煎饼具有Q弹的口感,非常美味,是一碗份量充足的汤品!

食で巡る日本~郷土料理紀行~
青森県 せんべい汁
せんべい汁は、青森県八戸周辺で食べられている郷土汁で、麦やそばで作ったせんべいを、ちぎって汁物に入れて作ります。近年では、当地の名物、南部せんべいが使われることが多いようです。
南部せんべいは旧南部藩の領地だった青森県南東部から岩手県北部にかけての伝統食品で、小麦粉に塩と水を混ぜ鉄製の型で丸く焼いたものです。江戸時代後期、飢饉や凶作が続き、米の収穫が難しかった現在の八戸市とその周辺を含む南部では、麦やそばが広く栽培されました。収穫された麦やそばの粉から、やわらかい麦せんべいやそばせんべいが作られるようになり、明治時代になって固く焼いた南部せんべいが誕生したと言われます。
せんべいは冷害が多く米がよく取れなかった地域の貴重な保存食でした。これを味噌汁や鍋に入れて煮たものが「せんべい汁」ということです。
せんべい汁には、ゴボウやニンジン、長ネギ、キャベツやしいたけなどの野菜のほか、鶏肉やサバなどの食材が使われてきました。使われる野菜には、ごぼうの食物繊維、キャベツのビタミン類、人参のカロテンと、豊富な栄養が含まれています。ひと煮した南部せんべいのモチモチとした食感がくせになる美味しさで、ボリュームのある一椀です!

Aomori Prefecture - Senbei Soup
Senbei soup is a local soup eaten around Hachinohe in Aomori Prefecture. It is made by breaking senbei (rice crackers) made from barley or buckwheat and adding them to a soup. In recent years, the local specialty, Nanbu senbei, is often used.
Nanbu senbei is a traditional food from the southeast part of Aomori Prefecture to the northern part of Iwate Prefecture, which were former territories of the Nanbu Clan. It is made by mixing wheat flour with salt and water and baking it round in an iron mold. From the late Edo period, due to famines and poor harvests making rice cultivation difficult, barley and buckwheat were widely grown in the current Hachinohe area and surrounding Nanbu region. From the harvested barley and buckwheat flour, soft barley senbei and buckwheat senbei were made, and in the Meiji era, the hard-baked Nanbu senbei was born.
Senbei were a valuable preserved food in regions where rice was hard to grow due to frequent cold damage. Senbei soup is made by adding them to miso soup or hot pot and simmering.
Senbei soup has used ingredients such as vegetables like burdock, carrots, green onions, cabbage, and shiitake mushrooms, as well as chicken and mackerel. The vegetables include rich nutrients such as dietary fiber from burdock, vitamins from cabbage, and carotene from carrots. The chewy texture of the simmered Nanbu senbei is addictive, making it a hearty and delicious dish!
