北海道 石狩锅
“石狩锅”是北海道代表性的乡土料理,将切块的鲑鱼肉和鱼骨与蔬菜一起放入昆布高汤中,用味噌调味后趁热食用的火锅料理。常用的蔬菜有长葱、萝卜、香菇、豆腐及绿叶蔬菜等。
据说“石狩锅”起源于石狩地方的渔夫料理。石狩地方位于以鲑鱼闻名的石狩河河口,自江户时代起鲑鱼捕捞就很兴盛。据传为了庆祝大丰收,渔夫们会将新鲜捕捞的鲑鱼块及鱼骨直接放入味噌汤锅中作为奖励食用。它是寒冬取暖的经典火锅菜肴,以味噌调味。原本是渔夫料理,但现在已成为家庭料理的常见菜肴,且深受游客欢迎,在全国也广为人知。
作为主要食材的鲑鱼富含抗氧化作用强的虾青素,不仅能增强免疫力,活化全身,还含有有助于血液循环的不饱和脂肪酸和多种维生素。此外,烤制时易流失的鲑鱼皮胶原蛋白也包含在“石狩锅”中,对美容有益。与鲑鱼一起可以摄入多种蔬菜,获取广泛营养,可谓是先人生活智慧的体现。

食で巡る日本~郷土料理紀行~
北海道 石狩鍋
「石狩鍋」は、北海道を代表する郷土料理で、ぶつ切りしたサケの身とあらを野菜と一緒に昆布のだし汁の中に入れて味噌で味をととのえ、熱いままいただく鍋料理です。野菜は、長ねぎ、大根、しいたけ、豆腐、葉物類などの具材が、よく使われるようです。
「石狩鍋」は、石狩地方から生まれた漁師料理と言われています。石狩地方は鮭で有名な石狩川の河口にあり、江戸時代から鮭漁が盛んにおこなわれていました。大漁を祝う際、漁師たちがとれたての鮭のぶつ切りやあらをそのまま味噌汁が入った鍋に入れ、ご褒美として食べていたのが始まりと伝えられています。寒い冬に身体を温める冬の定番鍋料理で、味噌で味付けされています。もともとは漁師料理でしたが、現在は家庭料理としても定番となっており、観光客にも人気が高く、全国的にも知られています。
メインの食材となる鮭には抗酸化作用が高いアスタキサンチンが多く含まれ、免疫力を高めて全身を活性化する働きがあるだけでなく、血液循環を良くする不飽和脂肪酸やビタミン類も豊富に含まれます。また、焼くと失われてしまうサケ皮のコラーゲンも「石狩鍋」には含まれており、美容にも良いことで知られています。鮭と一緒にいろいろな種類の野菜をたっぷりいただくことができて、幅広い栄養を摂ることができる、正に先人の生活の知恵が生かされた一品であると言えるでしょう。

Exploring Japan Through Food – A Journey Through Local Cuisine
Hokkaido: Ishikari Nabe
"Ishikari Nabe" is a representative local dish of Hokkaido, made by putting chopped salmon and its parts along with vegetables into a kelp-based broth and seasoning with miso, served hot as a stew. Common vegetable ingredients include green onions, daikon radish, shiitake mushrooms, tofu, and leafy greens.
"Ishikari Nabe" is said to have originated as a fisherman's dish from the Ishikari region, located at the mouth of the Ishikari River, which is famous for salmon. Salmon fishing flourished here from the Edo period. It is said that when celebrating a big catch, fishermen would put freshly caught salmon pieces or scraps into a pot with miso soup and eat it as a reward. It is a staple winter hot pot dish that warms the body and is seasoned with miso. Originally a fisherman's dish, it has now become a common home-cooked dish, popular with tourists and known nationwide.
The main ingredient, salmon, contains astaxanthin, which has high antioxidant properties, boosts immunity, and revitalizes the entire body. It is also rich in unsaturated fatty acids and vitamins that improve blood circulation. Additionally, the collagen in salmon skin, which is usually lost when grilled, is included in "Ishikari Nabe," making it beneficial for beauty. With a variety of vegetables eaten together with salmon, this dish allows for a wide range of nutrients, truly reflecting the wisdom of the ancestors' lifestyle.
