雨水と寒天
立春から15日目にあたる雨水は、少しずつ寒気が緩んで降る雪が雨へと変わり、雪解けが始まる頃です。奈良の若草山、京都の大原などで野焼きが行われるのは春の初めの風物詩ですが、野焼きは灰が牛や馬の飼料となる草の成長を促してくれます。
これらの行事は雨水に行われます。凍てついた田畑も雪解け水で潤いを取り戻し、少しずつ農作業の準備も始まります。
この季節に見られる風物詩の一つが、岐阜や長野で行われる寒天干しです。今回は、寒天についてお話ししたいと思います。羊羹や蜜豆の材料としてよく食べられている寒天ですが、紅藻類の天草やオリゴノリなどの細胞間質に存在する粘質多糖で、煮溶かして冷却して固めると「ところてん」ができますが、これを戸外の天然冷気で凍結乾燥させたものが寒天です。ところてんを寒さに晒して凍結、乾燥を繰り返してつくられますが、特に岐阜、長野ではこの時期によくみられる光景です。海に面していない長野や岐阜で寒天産業が盛んというのは不思議に思われるかもしれませんが、江戸時代に行商人によって伝えられ、農閑期の副業として定着した名残だともいわれます。寒天の主成分は多糖類のアガロースで、消化酵素で分解されないため栄養価はほとんどありませんが、ナトリウムと結びついて血圧を下げる働きがあるほか、コレステロールの上昇抑制、便量の増加、便秘の改善作用などが知られています。羊羹、みつまめなどの和菓子の素材としてよく使われる寒天ですが、寒天を使って、だし汁に鶏のささ身や魚介類、野菜などを入れた寒天寄せなどにしても、食卓を華やかにしてくれる一品になるでしょう。

Rainwater (Usui) and Agar
Rainwater, falling on the 15th day after the beginning of spring, marks the time when the cold gradually eases and snow starts turning into rain, beginning the thaw. In Nara’s Wakakusa-yama and Kyoto’s Ohara, controlled burns are carried out, a traditional early-spring scene. These burns help the growth of grasses used as feed for cows and horses by enriching the soil with ash.
These events occur during the Rainwater period. Frozen fields are rejuvenated by thawed snow water, and preparations for farming gradually begin.
One of the seasonal customs during this time is drying agar in Gifu and Nagano. Agar, often consumed as a material for yokan or mitsumame, is a mucilaginous polysaccharide found in the intercellular matrix of red algae such as tengusa and ogonori. When boiled, dissolved, and cooled, it becomes tokoroten, which is then freeze-dried outdoors using natural cold air to make agar. Making tokoroten by alternately freezing and drying it in the cold is a sight commonly seen in Gifu and Nagano during this season. Although it might seem strange that the agar industry is thriving in landlocked areas like Nagano and Gifu, it is said that traveling merchants introduced it during the Edo period, and it became established as a side job during the off-season for farmers. The main component of agar is the polysaccharide agarose, which is not broken down by digestive enzymes and thus has almost no nutritional value. However, it binds to sodium to lower blood pressure, suppresses cholesterol elevation, increases stool volume, and improves constipation. Agar, commonly used in Japanese sweets like yokan and mitsumame, can also be used to make colorful dishes such as agar jellies with chicken breast, seafood, vegetables, or dashi broth, enhancing the dining table.
