冬至与牡蛎

冬至是一年中白昼最短的一天。在二十四节气中,处于冬季正中,标志着隆冬的开始。另一方面,从这一天开始,日照时间逐渐延长,也就是说,从这一天起太阳开始复苏,因此被定位为阴气极盛、转向阳气的折返点。因此有“一阳来复”之说,意味着将衰运转向好运。冬至有吃南瓜、泡柚子浴的习惯。据说泡柚子浴的习惯始于江户时代。柚子香气浓烈,被认为能驱邪,人们将柚子放入浴缸中浸泡以行禊,这一习俗传至今。

冬季代表的美味之一是牡蛎。这个季节,在餐桌上用火锅等料理出现的机会也很多。牡蛎作为高营养食品,在世界各地都很受重视。由于其营养成分,也被称为“海牛奶”“海米饭”,含有牛磺酸、谷氨酸等游离氨基酸,以及维生素A、B1、B2等,还有铁、钙、锌、铜等矿物质,尤其对贫血和疲劳恢复有帮助。在中医中,还被认为有改善焦虑、心悸、不眠等神经症的功效。对于现代人来说,生活饮食不均衡、压力大的情况下,是必需的食材。新鲜牡蛎可挤柠檬汁或用醋生食味美,也可做牡蛎饭、土手锅等日式料理,或与菠菜、奶油酱烤制焗菜,或与青梗菜炒蚝油等,实现日式、西式、中式多样烹饪方法。

此时节,寒冷导致基础代谢下降,体温容易下降。改善寒冷最为重要。注意穿着保暖,合理使用一次性暖宝宝,通过按摩促进血液循环。

冬至と牡蠣

冬至は1年で最も昼が短い日です。二十四節気では、冬の真ん中、真冬の始まりです。一方で、この日を境に日照時間が延びていく、つまり、この日を境に太陽が復活し始めるため、陰の気が極まって陽の気に向かう折り返し地点とも位置づけられてきました。このことから、「一陽来復(いちようらいふく)」というもので、衰運をあらため幸運へと向かうという意味も込められています。冬至には、かぼちゃを食べたり、柚子湯につかる習慣があります。柚子湯に入る習慣は、江戸時代から始まったと言われています。柚子は強い香りがあり、邪気を払うと考えられ、柚子を風呂に浮かべて湯に浸かることによって禊をしていた習慣が、現在まで伝わっていると言われます。
冬を代表する味覚の一つに、牡蠣があります。この季節、鍋などで食卓に登場する機会も多いのではないでしょうか。牡蠣は、栄養価の高い食品として世界中で重宝されています。その栄養素から「海のミルク」「海の玄米」などともいわれますが、タウリンやグルタミン酸などの遊離アミノ酸をはじめ、ビタミンA、B1、B2などの他、鉄、カルシウム、亜鉛、銅などのミネラルも多く、特に貧血、疲労回復に役立ちます。漢方では不安感や動悸、不眠などの神経症などを改善する効用があるともされています。食生活が偏りがちで、ストレスが多い社会に生きる現代人には、必要な食材であると言えるでしょう。新鮮な牡蠣は、レモンを絞るか酢牡蠣で生食するのが美味しいですが、牡蠣ご飯、土手鍋などの和食だけでなく、ホウレンソウとクリームソースと一緒にグラタンにしたり、また、青梗菜などと一緒にオイスターソースで炒めたりなど、和・洋・中華の様々な調理方法で楽しめます。
この時期は、寒さによって基礎代謝が下がり、体温も下がりがちになります。冷えの改善は何よりも大切。衣服でしっかり防寒しつつ、使い捨てカイロを上手に活用したり、マッサージで血行を良くすることを心掛けましょう。

Winter Solstice and Oysters

The winter solstice is the day with the shortest daylight hours of the year. In the 24 solar terms, it marks the middle of winter and the beginning of deep winter. On the other hand, from this day onward, daylight gradually increases, meaning the sun begins to revive, making it a turning point from the peak of yin to the rise of yang. For this reason, it is associated with "Ichiyō Raifuku," meaning a transition from declining fortune to good luck. On the winter solstice, it is customary to eat pumpkin and take a yuzu bath. The custom of bathing in yuzu is said to have started in the Edo period. The strong fragrance of yuzu was believed to ward off evil spirits, and by floating yuzu in the bath and soaking in it, people performed a ritual purification, a tradition passed down to the present.

One of the representative seasonal foods of winter is oysters. At this time of year, they often appear on the dining table in hot pot dishes, among other preparations. Oysters are valued worldwide as a highly nutritious food. Due to their nutrients, they are sometimes called "milk of the sea" or "brown rice of the sea." They contain free amino acids like taurine and glutamic acid, vitamins A, B1, B2, and minerals such as iron, calcium, zinc, and copper, particularly helping with anemia and fatigue recovery. In traditional Chinese medicine, they are also believed to improve conditions such as anxiety, palpitations, and insomnia. For modern people living in a society with unbalanced diets and high stress levels, oysters are an essential food. Fresh oysters are delicious eaten raw with lemon or as vinegar oysters, but they can also be enjoyed in various preparations from Japanese dishes like oyster rice and hot pot to Western-style gratin with spinach and cream sauce, and Chinese-style stir-fry with bok choy and oyster sauce.

During this season, cold temperatures can lower basal metabolism and body temperature. Improving cold sensitivity is crucial. While keeping yourself warm with clothing, make good use of disposable heat packs and promote circulation with massage.
